Coffee Kahlua Salted Caramel Crumble Cake

That was a mouthful wasn't it? The name... that is... But trust me, once you start having this cake, you will not be able to stop stuffing yourself one mouthful at a time! Especially if you're a coffee lover.
I almost never get excited by just cake. I always need something more, an edge to make it happening for me. This cake though, is soooo good... I sneak into the kitchen and treat myself to a slice now and then. I tweaked a basic pound cake and made it into a coffee cake. Does that make sense? Terribly, horribly influenced by my aunt's Coffee Walnut Cake, something which my sil and I gobble up everytime she makes but forget to take down the recipe for.

Salted Caramel Sauce

Salted Caramel Sauce is basic... So basic it absolutely becomes a necessity sometimes for all your desserts. Its a miracle in a drizzle just waiting to happen.

I was going to put up a recipe for my "Latest" cake when I realised, it wouldnt be complete without telling you about Salted Caramel Sauce.

Dessert for the Lazies

It could also be called 'Dessert for Dummies'. Its just so so simple, its ridiculous. Makes me wonder why I hadn't thought about it earlier. I'd seen something similar on a Donna Hay show on 'DIY Tiramisu', but she used Savoiardi or Lady Fingers. Now how am I going to get those if I don't make them myself? So, as always, I substituted. With something thats so easily available in India and if you're home is like mine, we almost always have it along with our evening tea/coffee. Its tea rusk! The only difference being, these tea rusks were made at home by moi :-) (silly grin here)

Tomato Tart

Earlier today, I walked into my mother's kitchen to see freshly washed tomatoes, peeled shallots and a bunch of curry leaves. What else would I do but take a picture and share it on Facebook? And that my dear friends, was the beginning. When questions were asked as to what I was making, I said tomato tart cos I had this French Tomato Tart by David Lebovitz at the back of my mind. But I was wondering how to explain the curry leaves in the pic in a 'french' tomato tart when my cousin came up with a wonderful idea. It involved all the things in the picture plus some coconut cream, mustard and cheese. Now which self respecting person can ignore such an interesting combination of flavours? And thus 'The not so French Tomato Tart' was born.

Carrot & Fresh Coriander Cold Soup

Cold soups are beautiful. Especially if you live in a hot, humid tropical region. They cool you down, they lift you up and just give you an overall fresh feeling. It's only early March, but man, is Kerala sweating!! Its unbelievably hot and extremely dehydrating. I really dont want to spend too much time in a hot kitchen and I'd rather not have anything hot. So you'll easily see more of these cold soups coming around.

Red Velvet Cupcakes

Confession - I've never been to Magnolia & I've not seen more than two episodes of 'Sex and the City'. Then how come Red Velvet Cupcakes you might ask.

Year 2010, my friend decided she had enough of me huddling my baking skills and sharing it with only friends and family and that it was time I did something more. She asked me to bake a cake for her engagement party. Well... the party didn't take place, but two of my best friends did get married. Yayy! So anyway when we were discussing the cake and discussing options, we came up with the idea for a pretty little red velvet cake with cream cheese frosting and cute little things piped all over. Simple, yet decadent.

Pico de Gallo

Are you like me? Did you hear Pico de Gallo and think it was something really fancy? I'd read a lot and a lot and a lot about this and thought it was something really fancy. When I finally got to the ingredients and actually made it once, I realised its certainly YUM, TANGY, DELICIOUS.. all of it in capitals. But...it's a salad or what we call "Challas" in Kerala. Something most North Indians would have with their roti-sabji if they weren't munching through those god-awful, malodorous, thick, onion slices. Yes, I detest those onion slices...

'Ultimate' Chocolate Dessert Cake

When all you want to do is swim around in chocolate, this cake hits the right spot!

For reasons unknown, my mother has decided to give up chocolate. It happened a year ago. Don't ask me why. But she says she was eating too much chocolate and she got tired of it. Well.. actually that could be true. There hasn't been a time in my life when Mum's fridge hasn't had chocolates and we weren't having it a bit at a time after lunch. It's a little surprising though when someone like that ups and gives chocolate all of a sudden.
Anyway, one day she and I were watching Donna Hay on TLC and suddenly she went.. "that looks gooood!" Mum never goes like that for anything chocolatey now. So I made my folks the 'Ultimate One Bowl Chocolate Dessert Cake' for their anniversary.

The recipe calls for almonds. I like almonds. But let's be honest - they're a little too expensive for me at the moment. Besides I've always been one for using whatevers around the house. Unless of course I'm making something where I absolutely need that 'Special' ingredient. Cashews were my choice of nuts for this one. This cake is incredibly easy to make... and like she says just one bowl! How lucky are we bakers! Use your best chocolate for this one, because obviously the main ingredient is chocolate and its taste will shine through

I've observed that everytime I move houses, there is inevitably an occasion within a few weeks where there are people over. Obviously I don't want anyone to notice the mess I haven't gotten around to putting away. So I go about making something which can get them to forget the unkempt house and just concentrate on their taste buds.
